LIME BUTTER COOKIES

These feel like cheating. They are so easy to make I almost feel bad. You can make them with any citrus and if my kid didn't hate the orange and chocolate combo these would 100% be that. He's lucky the lime version is so good.


Ingredients are listed in the order they appear in the recipe and anything that requires prep is in bold. Ingredients are bolded in the directions when you first encounter them as well as when they are reintroduced after being set aside. All ingredients are Capitalized.

INGREDIENTS:


For Cookies:

1 stick (1/2 cup) Unsalted Butter, softened

8 ounces Cream Cheese

1 large Egg (2 Eggs for cakier cookies*)

1/4 teaspoon Vanilla Extract

1 box Yellow Cake Mix

1 cup Powdered Sugar


For Glaze:

2 cups Powdered Sugar

2 Tablespoons Lime Zest, finely grated

1/3 cup fresh Lime Juice

1 ounce Baking Chocolate, grated

TOOLS:


Electric Mixer

Wire Rack

Silicone Baking sheet

DIRECTIONS:


To make Cookies:


Preheat oven to 350 degrees.


Combine 1 stick (1/2 cup) softened Unsalted Butter, 8oz Cream Cheese, 1 large Egg and 1/4 tsp Vanilla Extract in a bowl and use the electric mixer on medium speed until light and fluffy. *Use a second Egg if the dough becomes to dry or hard to work with while mixing.


Add 1 box Yellow Cake Mix and mix until the dough becomes thick but smooth.


Pour 1 cup Powdered Sugar into a separate bowl. For easier dough to work with while rolling, chill batter in the refrigerator for 30 minutes. Scoop a spoonful of the cookie dough and roll it into a ball, then roll it in the Powdered Sugar until fully covered.


Place cookies on baking sheet approximately 1 inch apart. Once full, put the batch in the oven for 12 minutes. Test for doneness with a tooth pick. If the tooth pick comes out clean remove the cookies from the oven and place on wire rack to cool.


To make Glaze:


Wait for the cookies to cool completely.


In a medium bowl, whisk together 2 cups Powdered Sugar, 2 Tbsp finely grated Lime Zest and 1/3 cup fresh Lime Juice until smooth.


Drizzle glaze over each cookie and top with 1oz grated Baking Chocolate immediately.
