DUTCH BABY WITH BLACKBERRY COMPOTE
These are so easy to make, but seem so utterly fancy. You can use any skillet that you can put in the oven. Most recipes suggest cast iron, but I use a ceramic one and it's literally slide right out and onto the plate without sticking EVERY time so...there's no need to involve seasoned cookware here. The compote is also something that sounds complicated, but is super simple. You can use pretty much any fruit and it turns out great.

CHICKEN DRUMSTICKS OR WHATEVER
I discovered this recipe because chicken drumsticks are really cheap right now, but my son sort of hates food with recognizable animal parts so I needed to make them so good he would be willing to deal with the occasional tendon. Success! Also, it works on pretty much anything so go crazy. Ingredients are listed in the order they appear in the recipe and anything that requires prep is in bold . Ingredients are bolded in the directions when you first encounter them as well as

CAFE CHIMES HUMMUS? SPREAD
There was a vegetarian restaurant in my husbands home town in the 90's called Cafe Chimes. This was a pretty big accomplishment for rural New Hampshire at the time so when he managed to find their cookbook he was very excited. The first thing I made was a salad dressing which is SO GOOD I decided to try more. This one is called Hummus, but honestly I do not believe that. It's amazing though so I repurposed it as a spread. Ingredients are listed in the order they appear in the

MOROCCAN MEATBALLS WITH HALLOUMI & MINT TZATZIKI
All of the major components can be eaten on their own and are still good (or even better) the next day, which makes this a favorite because I'm a big Leftovers Snacker.

LIME BUTTER COOKIES
These feel like cheating. They are so easy to make I almost feel bad. You can make them with any citrus and if my kid didn't hate the orange and chocolate combo these would 100% be that. He's lucky the lime version is so good. Ingredients are listed in the order they appear in the recipe and anything that requires prep is in bold . Ingredients are bolded in the directions when you first encounter them as well as when they are reintroduced after being set aside. All ingredien

WHITE CHICKEN CHILI
This is absolutely one of the best things you can through together in under 15 minutes. I like to make it with big juicy chicken breasts, but you can use leftover chicken or pick up a rotisserie. This puts the chill in chili so whatever's easiest. ALSO, I don't usually add corn to this, but I did for this one and it was...fine. I think I just don't like corn mixed into things. If you do, go crazy.
